An extremely sharp affair is the traditional Opinel pocket knife with an 8.5 cm blade made of high-alloy XC90 carbon steel. This non-stainless steel has a special hardness and can be easily resharpened. The blade is easily locked in place when open via the typical rotating ring. The so-called Virobloc safety system is, among other things, a trademark of Opinel. The handle is made of dried and long aged birch wood, which after the manufacturing process is provided with a special varnish to protect it from moisture.

Knives with carbon steel (carbon steel) still have a following. In the tactical field, these knives are even wanted. While you have to clean and dry these knives more carefully after use, they stay sharp for a long time and are easy to resharpen.
