You could almost think that the ingenious Wüsthof Performer Rotoku with hollows 17 cm is a classic Santoku - but this knife can do more. With its 17 cm long, DLC-coated blade, it clearly stands out. Instead of a straight edge, it has a slightly curved shape, which enables more precise cradle cuts and ensures even more flexible handling. Perfect for fine slicing, powerful chopping or precise weighing cuts. The wide blade provides ideal cutting guidance and also serves as a practical surface for easily transporting sliced ingredients into a pan or bowl.
The Rotoku is an evolution of the classic art of knives. Inspired by the traditional Santoku, it extends the well-known “three virtues” (meat, fish, vegetables) to include chopping, weighing and transporting. The name “Rotoku” is derived from the Japanese “Roku” (six) - an allusion to the six core skills that make this knife a versatile all-rounder.
The hollows along the blade prevent ingredients from sticking, making it easy to process even the finest chopped food. The Diamond-like Carbon (DLC) coating not only gives the blade a deep black, elegant look, but also makes it particularly resistant and low-friction - for unparalleled cutting performance.
The ergonomic Hexagon Power Grip with its offset honeycomb structure ensures extreme grip and control, even with wet or greasy hands. A knife for anyone who wants to be prepared for anything in the kitchen.

Since its founding in 1814 by Johann Abraham Wüsthof, the name WÜSTHOF has stood for uncompromising quality, passionate craftsmanship, and family consistency. Even after more than two centuries, the company is still family-owned—a rare case in today's economy—and continues to manufacture exclusively in Solingen, the world-famous “City of Blades.”
What began as a small scissors workshop in a basement developed over generations into an internationally recognized manufacturer of high-quality knives. Eduard and Robert Wüsthof were particularly influential in this development: Eduard expanded the range to over 1,200 models, while Robert took the courageous step of crossing the Atlantic and successfully established Solingen blades in the USA despite initial difficulties.
WÜSTHOF knives are made where modern precision technology meets deep-rooted craftsmanship – in their hometown of Solingen. While other manufacturers are moving abroad, WÜSTHOF is committed to local manufacturing, sustainable production, and the experience of some of the world's best master blacksmiths. Because true quality takes time, expertise, and passion – no compromises.
The result: knives that impress with their sharpness, balance, and durability and are valued worldwide – whether in professional kitchens or in discerning private households. The trident logo has always stood for the WÜSTHOF philosophy: family values, innovation, and the highest manufacturing standards – from Solingen, for the world.
