The 9 cm long blade is made of 73 layers of high-carbon San Mai Damascus steel. The core of St650 powder steel is surrounded by 316/316L steel layers, giving the blade an impressive hardness of 63 HRC while maintaining high flexibility. Thanks to the Rockwell hardness, the cutting edge remains sharp and resistant to everyday kitchen stresses.

The precise 2x15% blade grind ensures a sharp cutting edge and minimises resistance when cutting – ideal for effortlessly handling even the smallest ingredients. With a blade width of 2.2 cm and a thickness of 2.2 mm, the A-73 paring knife is optimally balanced and allows for precise control for fine, controlled cuts.
