The Windmühlenmesser R. Herder IBEX 120 Inox Olive is a full-sized outdoor pocket knife that impresses with its traditional design and impressive size. Inspired by the classic shape of the Okapi knife, which was manufactured in Solingen and exported worldwide, the IBEX represents an innovative further development of this historic knife type. It is specially designed for outdoor activities and impresses with its excellent cutting properties.
The blade of the rustic folding knife is made of stainless chrome-molybdenum-vanadium steel, which is characterized by its corrosion resistance. With a hardness of approx. 57 HRC, the blade offers a good balance between sharpness and edge retention. The steel used, known as 1.4116 (X50CrMoV15), contains approx. 0.55 % carbon and 15 % chromium, which not only ensures excellent edge retention, but also good corrosion resistance. The blade is easy to clean and ideal for use in demanding environments. The blade geometry of the IBEX 120 is designed for maximum cutting performance. With a length of approx. 12 cm and a spine thickness of 2.5 mm, the blade offers a stable yet fine cutting edge thanks to its convex grind. The straight back of the blade slopes slightly towards the tip, giving it exceptional stability and making the tip slim and precise at the same time. This shape, which is reminiscent of the traditional sheepfoot blade, enables effortless cutting and severing of a wide variety of materials.
A special feature of this rustic pocket knife is the innovative ratchett lock. This modern version of the traditional tang lock combines a secure lock with easy handling. The nail nick on the blade allows it to be opened effortlessly with two hands until it engages securely in the back spring. To close the knife, the spring is released via a ring on the handle, allowing the blade to be folded in safely in controlled steps. This mechanism prevents the blade from accidentally slamming shut and increases safety during operation. This operation means that the large folding knife can be used in compliance with the German Weapons Law and the handle is made of high-quality olive wood, which impresses with its lively grain. The clear lines of the handle ensure a pleasant feel and combine functionality with natural aesthetics. The wood is finely finished and oiled, giving it a long service life.
With a total length of approx. 29 cm, the Windmühlenmesser R. Herder IBEX 120 Inox Olive is not only a practical tool, but also a piece of craftsmanship that continues the long tradition of Solingen knife making. It is ideal for a wide variety of outdoor uses and offers exceptional reliability and performance thanks to its high-quality workmanship and the materials used.

For over 150 years, the name Robert Herder has stood for excellent knife quality “Made in Solingen.” Founded in 1872 by Robert Herder at Keusenhof, the company developed from a traditional family of blacksmiths whose roots date back to the 18th century. From the very beginning, Robert Herder focused on quality rather than quantity – with handmade kitchen knives, scissors, and cutlery that were soon appreciated far beyond the borders of Solingen.
Even in the fourth and fifth generations, the company remained true to the principles of craftsmanship and the highest quality materials. Under the leadership of Giselheid Herder-Scholz and Frank Daniel Herder, the company mastered the challenges of globalization and structural change. The philosophy: only a knife made by hand can be truly sharp – and stay that way. That is why Robert Herder revived long-forgotten apprenticeship trades such as grinder and cutter, thereby securing the future of traditional Solingen craftsmanship.
With iconic series such as the K series, Parmoulin, and Grandmoulin, numerous design awards, and a global distribution network in 24 countries, the family-owned company proves that tradition and innovation are not mutually exclusive.
The credo remains the same:
“Good knives are made by hand.”
And you can feel it – with every cut.
