The WÜSTHOF Classic Black Chai Dao with hollow edge combines the best features of a Santoku and a Chinese chef's knife in one powerful, elegant tool. Made in Solingen from forged steel with a Rockwell hardness of 58 HRC, this knife impresses with its premium quality and durability. The ergonomic, riveted handle made of special plastic ensures safe handling and perfect balance.
The 17 cm long and 5.58 cm wide blade follows the traditional rectangular shape of the Chinese knife, but combines it with a gently curved cutting edge. This makes the Chai Dao not only suitable for chopping and cutting, but also perfect for effortless rocking cuts – ideal for meat, vegetables, fruit and fish.
Thanks to the precise grinding, the blade glides effortlessly through delicate ingredients, while the hollow grinding reduces the adhesion of food. However, the fine cutting edge should not be used for chopping bones – for such work, we recommend European cleaver knives or cleaver knives. A versatile companion for demanding chefs who are looking for precision and versatility in an extraordinary design.

Since its founding in 1814 by Johann Abraham Wüsthof, the name WÜSTHOF has stood for uncompromising quality, passionate craftsmanship, and family consistency. Even after more than two centuries, the company is still family-owned—a rare case in today's economy—and continues to manufacture exclusively in Solingen, the world-famous “City of Blades.”
What began as a small scissors workshop in a basement developed over generations into an internationally recognized manufacturer of high-quality knives. Eduard and Robert Wüsthof were particularly influential in this development: Eduard expanded the range to over 1,200 models, while Robert took the courageous step of crossing the Atlantic and successfully established Solingen blades in the USA despite initial difficulties.
WÜSTHOF knives are made where modern precision technology meets deep-rooted craftsmanship – in their hometown of Solingen. While other manufacturers are moving abroad, WÜSTHOF is committed to local manufacturing, sustainable production, and the experience of some of the world's best master blacksmiths. Because true quality takes time, expertise, and passion – no compromises.
The result: knives that impress with their sharpness, balance, and durability and are valued worldwide – whether in professional kitchens or in discerning private households. The trident logo has always stood for the WÜSTHOF philosophy: family values, innovation, and the highest manufacturing standards – from Solingen, for the world.
