Jedes Messer wird in bis zu 216 Arbeitsschritten ganz traditionell von einem Messerschmied gefertigt, der sein ganzes Wissen, Geschick und Herz bis zur Fertigstellung des Laguiole-Messers gibt. In der Manufaktur Laguiole en Aubrac verziert ein Messerschmied per Hand den Rücken des Messers mit seiner eigenen Gravur, der sogenannten Guilloche, und gibt dem Messer damit ein unverkennbares Merkmal. Als Grifmaterialien werden wunderschöne Hölzer aus der Provinz, europäische und exotische Hölzer verwendet und passgenau bearbeitet. Die geschmiedeten Klingen werden aus unterschiedlichsten Damaststählen und rostfreiem Stahl hergestellt.
