Timeless craftsmanship reinterpreted – the Windmühlenmesser R. Herder IBEX 80 Inox Olive
The IBEX 80 Inox Olive from Windmühlenmesser R. Herder combines classic Solingen blacksmithing with modern functionality. Inspired by the legendary Okapi knife, this pocket knife is not just a tool, but a piece of living craftsmanship – made for anyone who appreciates quality and style in everyday life and in nature.
Precise cutting performance thanks to proven blade steel
The approx. 8 cm long blade made of stainless chrome-molybdenum-vanadium steel (1.4116 / X50CrMoV15) impresses with its excellent cutting performance and high corrosion resistance. With a hardness of approx. 57 HRC, it is robust enough for daily use, yet sensitive enough for precise cuts. The convex grind ensures a perfect balance between stability and sharpness.
Sophisticated safety system: the ratchet lock
The modern ratchet lock – a further development of the traditional pin lock – guarantees that the blade is securely locked in place. The knife is opened with both hands using the nail notch, locks reliably into place and can be closed again in a controlled manner using a ring mechanism. The design complies with § 42a, meaning that the knife can be carried legally in Germany.
Elegant handle material: olive wood with character
The ergonomic handle made of finely oiled olive wood gives the knife a warm feel and a natural, individual look. The expressive grain of the wood emphasizes the high-quality workmanship and makes each piece unique. The handle lies securely in the hand – even during prolonged use.
Compact, functional, stylish
With a total length of approx. 20 cm, the IBEX 80 is ideal for outdoor activities, hiking, or everyday use. Its well-thought-out shape, low weight, and clean lines make it a stylish and reliable companion in any situation.

For over 150 years, the name Robert Herder has stood for excellent knife quality “Made in Solingen.” Founded in 1872 by Robert Herder at Keusenhof, the company developed from a traditional family of blacksmiths whose roots date back to the 18th century. From the very beginning, Robert Herder focused on quality rather than quantity – with handmade kitchen knives, scissors, and cutlery that were soon appreciated far beyond the borders of Solingen.
Even in the fourth and fifth generations, the company remained true to the principles of craftsmanship and the highest quality materials. Under the leadership of Giselheid Herder-Scholz and Frank Daniel Herder, the company mastered the challenges of globalization and structural change. The philosophy: only a knife made by hand can be truly sharp – and stay that way. That is why Robert Herder revived long-forgotten apprenticeship trades such as grinder and cutter, thereby securing the future of traditional Solingen craftsmanship.
With iconic series such as the K series, Parmoulin, and Grandmoulin, numerous design awards, and a global distribution network in 24 countries, the family-owned company proves that tradition and innovation are not mutually exclusive.
The credo remains the same:
“Good knives are made by hand.”
And you can feel it – with every cut.
