Thanks to a Rockwell hardness of 60 HRC, the cutting edge remains extremely sharp and is suitable for precise, fine cuts.
The 20.5 cm long blade, 3.5 cm wide and 2.2 mm thick, is specially designed for carving and finely slicing ham, roasts and other types of meat. The precise 2x15% blade grind ensures minimal resistance when cutting, which extends the edge retention and enables a smooth, clean cut.
