Filleting knife

A filleting knife is mainly used for filleting fish. But it can also be used to remove tendons and skin or cut thin slices when preparing meat. A filleting knife has a long, thin blade and is very sharp. The blade length can vary between 15 and 30 cm. In most cases, it is about 20 cm.
