Its Tsuchime surface - a traditional, hand-hammered pattern - prevents food from sticking and ensures effortless cutting. The tsuchime technique is an art reserved for only the most experienced master blacksmiths. A targeted hammer blow not only creates the aesthetically unique pattern, but also small air cushions that minimize adhesion between the food being cut and the blade.
