The Windmühlenmesser R. Herder IBEX 100 Inox Black Walnut is a masterfully crafted outdoor pocket knife that embodies traditional Solingen craftsmanship in an elegant and timeless design. This knife, inspired by the classic shape of the Okapi knife, which was produced in Solingen and appreciated worldwide, combines modern functionality with fine materials. Specially developed for use in the great outdoors, the IBEX impresses with its excellent cutting properties and robust construction.
The blade of the rustic outdoor pocket knife is made of high-quality stainless chrome-molybdenum-vanadium steel, a material known for its outstanding corrosion resistance and durability. With a hardness of approx. 57 HRC, the blade offers an ideal balance between sharpness and edge retention. The steel used, known as 1.4116 (X50CrMoV15), offers excellent cutting performance and high resistance to rust and wear. This easy-care blade is ideal for demanding outdoor adventures. The blade geometry of the IBEX 100 is designed to offer maximum cutting performance and precision. With a length of approx. 10 cm and a spine thickness of 2.5 mm, the blade combines stability and finesse thanks to its spherical grind. The straight back of the blade only drops slightly near the tip, which gives the blade additional stability and at the same time enables precise cutting. This shape, which is reminiscent of the traditional sheepfoot blade, makes the knife ideal for cutting and severing a wide variety of materials in the outdoor sector.
The special feature of the IBEX is the innovative ratchett lock. This modern development of the classic tang lock ensures that the blade is securely locked in place and is easy to use. The blade can be opened effortlessly with two hands using the nail nick and locks securely into the back spring. To close, the spring is released via a ring on the handle, allowing the blade to be folded in stages in a controlled manner. This mechanism prevents accidental slamming and increases safety during operation. The secure locking mechanism and two-handed operation make the knife compliant with the provisions of the German Weapons Act.
The handle of the full-sized outdoor knife is made from exquisite black walnut wood, which impresses with its dark, subtle grain and elegant appearance. This high-quality wood gives the knife a classic, elegant look and makes it a timeless companion. The dark colouring of the black walnut wood harmonises perfectly with the robust design of the blade and underlines the fine craftsmanship that has gone into every detail of this knife. The wood is carefully crafted and oiled, which not only ensures the longevity of the handle, but also offers a pleasant feel.
With a total length of approx. 24 cm, the Windmühlenmesser R. Herder IBEX 100 Inox Black Walnut is a stylish and reliable tool for anyone who values quality and aesthetics. Whether for outdoor use or as an elegant everyday knife, the IBEX 100 impresses with its high performance and the sophisticated combination of fine black walnut wood and high-quality steel.

For over 150 years, the name Robert Herder has stood for excellent knife quality “Made in Solingen.” Founded in 1872 by Robert Herder at Keusenhof, the company developed from a traditional family of blacksmiths whose roots date back to the 18th century. From the very beginning, Robert Herder focused on quality rather than quantity – with handmade kitchen knives, scissors, and cutlery that were soon appreciated far beyond the borders of Solingen.
Even in the fourth and fifth generations, the company remained true to the principles of craftsmanship and the highest quality materials. Under the leadership of Giselheid Herder-Scholz and Frank Daniel Herder, the company mastered the challenges of globalization and structural change. The philosophy: only a knife made by hand can be truly sharp – and stay that way. That is why Robert Herder revived long-forgotten apprenticeship trades such as grinder and cutter, thereby securing the future of traditional Solingen craftsmanship.
With iconic series such as the K series, Parmoulin, and Grandmoulin, numerous design awards, and a global distribution network in 24 countries, the family-owned company proves that tradition and innovation are not mutually exclusive.
The credo remains the same:
“Good knives are made by hand.”
And you can feel it – with every cut.
