The Windmühlenmesser IBEX 100 Carbon Thermo Beech is a versatile outdoor pocket knife that impresses with its size and robust construction. This model, inspired by the classic shape of the Okapi knife from Solingen, is a modern reinterpretation of the historic design that was specially developed for use in the great outdoors. The IBEX combines traditional craftsmanship with a functional design, making it an indispensable companion for outdoor enthusiasts.
The blade of this robust pocket knife is made of high-quality carbon steel, a material known for its outstanding sharpness and edge retention. The carbon steel used, known as 1.2067 (102Cr6), contains a high carbon content of at least 0.95 %, which gives it a hardness of around 58-59 HRC. This hardness enables an extremely sharp cutting edge, which is particularly suitable for precise cutting work. The blade can also be resharpened easily and effectively, making it ideal for use on the go. A typical feature of carbon steel is the natural patina that forms on the blade over time and gives it an individual touch. The blade measures approx. 10 cm in length and has a back thickness of 2.5 mm. Its crowned grind ensures a stable yet fine edge that is ideally suited for a wide range of outdoor cutting tasks. The straight spine of the blade only drops slightly near the tip, which gives the blade additional stability and enables precise handling. This shape, which is reminiscent of the classic sheepfoot blade, makes the IBEX a reliable tool for demanding outdoor activities.
A special feature is the innovative ratchett lock. This modern version of the traditional tang lock ensures that the blade is securely locked in place and is easy to use. The blade can be opened effortlessly with two hands using the nail nick and locks securely into the back spring. To close the knife, the spring is released via a ring on the handle, which allows the blade to be folded in stages in a controlled manner and prevents accidental closing. This mechanism not only offers safety, but also fulfills the requirements of the German weapon law, as the knife is operated with two hands.
The handle of the Windmühlen knife is made of thermally modified beech wood, known as thermo beech. The thermal treatment gives the wood a deep brown color and makes it particularly resistant to moisture and temperature fluctuations. This modification not only improves the durability of the wood, but also gives the handle an elegant, warm appearance. The ergonomic shape of the handle ensures a pleasant feel and combines functionality with a natural, rustic charm.
With a total length of approx. 24 cm, the Windmühlenmesser R. Herder IBEX 100 Carbon Thermo Beech is a reliable tool for outdoor adventures and everyday tasks. It combines traditional Solingen craftsmanship with modern materials and a well thought-out design that impresses both in terms of functionality and aesthetics. Whether for hiking, camping or as a stylish everyday knife, the IBEX is a faithful companion that impresses with its quality and sharpness in every situation.

For over 150 years, the name Robert Herder has stood for excellent knife quality “Made in Solingen.” Founded in 1872 by Robert Herder at Keusenhof, the company developed from a traditional family of blacksmiths whose roots date back to the 18th century. From the very beginning, Robert Herder focused on quality rather than quantity – with handmade kitchen knives, scissors, and cutlery that were soon appreciated far beyond the borders of Solingen.
Even in the fourth and fifth generations, the company remained true to the principles of craftsmanship and the highest quality materials. Under the leadership of Giselheid Herder-Scholz and Frank Daniel Herder, the company mastered the challenges of globalization and structural change. The philosophy: only a knife made by hand can be truly sharp – and stay that way. That is why Robert Herder revived long-forgotten apprenticeship trades such as grinder and cutter, thereby securing the future of traditional Solingen craftsmanship.
With iconic series such as the K series, Parmoulin, and Grandmoulin, numerous design awards, and a global distribution network in 24 countries, the family-owned company proves that tradition and innovation are not mutually exclusive.
The credo remains the same:
“Good knives are made by hand.”
And you can feel it – with every cut.
