The traditional Windmühlen knife R. Herder IBEX 100 Carbon Olive embodies a successful combination of traditional craftsmanship and modern functionality, specially developed for demanding outdoor use. As a contemporary reinterpretation of the classic Okapi knife, which has its origins in Solingen and is appreciated worldwide, this knife offers an outstanding blend of precision and robustness that will delight outdoor enthusiasts and collectors alike.
The blade of this rustic pocket knife is made of high-quality carbon steel, a material known for its extreme sharpness and excellent edge retention. Carbon steel offers a blade hardness of around 60 HRC, which gives it exceptional cutting performance. Unlike stainless steel, carbon steel does require a little more maintenance to prevent corrosion, but for many cutting tool enthusiasts, the benefits of sharpness and ease of resharpening outweigh the disadvantages. The blade measures around 10 cm in length and has a back thickness of 2.5 mm, which gives it an excellent balance between stability and precision. The convex grind ensures that the blade is not only robust, but also suitable for fine cutting work. The straight back of the blade, which sinks slightly towards the tip, gives the blade additional stability and enables precise cuts. This blade geometry, reminiscent of the traditional sheepfoot blade, is ideal for a wide range of outdoor applications, from fine cuts to powerful severing.
The heart of the IBEX 100 is the innovative Ratchett-Lock fastener. This modern development of the classic tang lock offers safe and easy handling. The blade can be opened effortlessly with two hands via the nail nick and locks securely into the back spring, making it stable and reliable for use. The locking mechanism allows controlled folding of the blade by releasing the spring via a ring on the handle. This secure locking mechanism prevents accidental slamming and ensures that the knife complies with the provisions of the German Weapons Act.
The handle is made of fine olive wood, which impresses with its characteristic grain and warm coloring. The olive wood not only gives the knife a natural aesthetic, but also ensures a pleasant feel and excellent grip. The wood is carefully oiled and polished, which increases its durability and gives it an elegant look at the same time. The clean lines of the handle harmonize perfectly with the robust blade and underline the traditional craftsmanship that has gone into this knife.
With a total length of approx. 24 cm, the Windmühlenmesser R. Herder IBEX 100 Carbon Olive is a versatile and stylish companion for anyone who appreciates quality and functionality in a compact format. Whether for outdoor adventures or as an elegant everyday knife, the IBEX 100 Carbon impresses with its exceptional cutting performance and the elegant combination of carbon steel and olive wood. This knife is not just a tool, but also an expression of craftsmanship and timeless design that will reliably stand by your side in any situation.

For over 150 years, the name Robert Herder has stood for excellent knife quality “Made in Solingen.” Founded in 1872 by Robert Herder at Keusenhof, the company developed from a traditional family of blacksmiths whose roots date back to the 18th century. From the very beginning, Robert Herder focused on quality rather than quantity – with handmade kitchen knives, scissors, and cutlery that were soon appreciated far beyond the borders of Solingen.
Even in the fourth and fifth generations, the company remained true to the principles of craftsmanship and the highest quality materials. Under the leadership of Giselheid Herder-Scholz and Frank Daniel Herder, the company mastered the challenges of globalization and structural change. The philosophy: only a knife made by hand can be truly sharp – and stay that way. That is why Robert Herder revived long-forgotten apprenticeship trades such as grinder and cutter, thereby securing the future of traditional Solingen craftsmanship.
With iconic series such as the K series, Parmoulin, and Grandmoulin, numerous design awards, and a global distribution network in 24 countries, the family-owned company proves that tradition and innovation are not mutually exclusive.
The credo remains the same:
“Good knives are made by hand.”
And you can feel it – with every cut.
