The Windmühlenmesser R. Herder IBEX 100 Inox Plum Wood is an elegant and functional outdoor pocket knife that combines traditional craftsmanship with a timeless design in a compact format. Inspired by the proven shape of the Okapi knife, which was made in Solingen and has gained worldwide recognition, the IBEX represents a modern evolution of this classic knife type. Specially designed for use in the great outdoors, this knife impresses with its excellent cutting properties and robust construction.
The blade of the classic Solingen pocket knife is made of stainless chrome-molybdenum-vanadium steel, a material known for its exceptional corrosion resistance and durability. With a hardness of approx. 57 HRC, the blade offers an ideal balance between edge retention and easy resharpening. The easy-care blade is perfect for demanding outdoor use. The geometry of the IBEX 100 blade is designed to offer maximum cutting performance and precision. With a length of approx. 10 cm and a spine thickness of 2.5 mm, the blade combines stability and a fine grind. The cutting performance is enhanced by the bevelled edge. The straight back of the blade only drops slightly near the tip, which gives the blade particular stability, while the slim tip enables precise cutting. This shape, which is reminiscent of the traditional sheepfoot blade, is ideal for cutting and severing a wide range of materials in outdoor applications.
An outstanding feature of the IBEX is the innovative ratchett lock. This modern development of the classic tang lock ensures that the blade is securely locked in place and is easy to use. With the help of the nail skin on the blade, the knife can be opened effortlessly with two hands until it engages securely in the back spring. To close, the spring is released via a ring on the handle, allowing the blade to be folded in stages in a controlled manner. This mechanism prevents accidental closing and enables safe operation. Thanks to this secure locking mechanism and the two-handed operation, the knife complies with the provisions of the German Weapons Act.
The handle of the Windmühlen knife is made of exquisite plum wood, which impresses with its warm, reddish-brown colour and elegant grain. The plum wood gives the knife a classic yet timeless look, which is emphasised by the finely coordinated finish and careful oiling of the wood. The clear lines of the handle ensure a pleasant feel and combine functionality with stylish aesthetics. The wood is not only visually appealing, but also robust and durable, guaranteeing the knife a long service life and a comfortable grip.
With a total length of approx. 24 cm, the Windmühlenmesser R. Herder IBEX 100 Inox Plum Wood is a versatile and stylish tool that is ideal for outdoor activities as well as everyday use. By combining traditional Solingen craftsmanship with high-quality materials and a well thought-out design, the IBEX 100 is a reliable companion for a wide range of uses. This knife is the ideal choice for anyone looking for a practical yet elegant pocket knife that impresses with its timeless beauty and outstanding performance.

For over 150 years, the name Robert Herder has stood for excellent knife quality “Made in Solingen.” Founded in 1872 by Robert Herder at Keusenhof, the company developed from a traditional family of blacksmiths whose roots date back to the 18th century. From the very beginning, Robert Herder focused on quality rather than quantity – with handmade kitchen knives, scissors, and cutlery that were soon appreciated far beyond the borders of Solingen.
Even in the fourth and fifth generations, the company remained true to the principles of craftsmanship and the highest quality materials. Under the leadership of Giselheid Herder-Scholz and Frank Daniel Herder, the company mastered the challenges of globalization and structural change. The philosophy: only a knife made by hand can be truly sharp – and stay that way. That is why Robert Herder revived long-forgotten apprenticeship trades such as grinder and cutter, thereby securing the future of traditional Solingen craftsmanship.
With iconic series such as the K series, Parmoulin, and Grandmoulin, numerous design awards, and a global distribution network in 24 countries, the family-owned company proves that tradition and innovation are not mutually exclusive.
The credo remains the same:
“Good knives are made by hand.”
And you can feel it – with every cut.
