The sandwich steel
Forged using the Hon-Warikomi method, the 18 cm long blade of this Japanese chef's knife is made of two different types of blade steel. The core steel is a very carbon-rich steel called Takefu Shiro-2, which provides enormous cutting performance and long-lasting sharpness. To protect against corrosion, this core layer is encased in two layers of SUS410 steel, creating a kind of steel lamination or sandwich steel.
Layer by layer
The typical reddish-brown handle of the Santoku knife is made of Japanese laminated wood and is connected to the blade tang with three steel rivets. This makes the knife slightly more robust and even more reliable. The handle is finished off towards the blade with a stainless steel bolster, which gives it a more rounded overall appearance.
